Barley Vegetable Soup

Ingredients:

4 cups vegetable broth

½ cup uncooked barley

1 large carrot, peeled and chopped

1 stalk celery, chopped

1 cup diced tomatoes

½ zucchini, chopped

1 can garbanzo beans, drained

1 small onion, chopped

1 garlic clove, peeled and minced

1 bay leaf

½ tsp turmeric

½ tsp paprika

½ tsp Himalayan pink salt

¼ tsp ground black pepper

Shake of Worcestershire sauce

Method:

Pour the vegetable broth into a large pot. Add the barley, carrots, celery, tomatoes, zucchini, beans, onion, garlic and balance of seasonings.

Bring to a boil, then reduce heat and simmer for 30 minutes, stirring occasionally.

Serves 4
